Zucchini and Cheese Flan

This recipe for a savory flan is perfect when served with a fresh, crisp garden salad. It also specifies that a soft cow-milk cheese be used. A very popular dish made in France.

Ingredients

  • 3 small-medium zucchini
  • 2 tblsp olive oil
  • Salt and freshly ground black pepper
  • 1 tsp curry powder
  • 2 round soft cheeses (Camembert or Brie) cows milk cheese, cut in half horizontally
  • 1 whole egg
  • 1 egg yolk
  • 120 ml crème fraiche
  • 2 tblsp chives
  • Butter for greasing
  • Rocket or a lettuce, to serve

Directions

  • Preheat oven to 180 degrees .Wash zucchini, then cut into 2 mm thick slices.
  • Heat the oil in a large frypan over medium – high heat. Cook the zucchini in two batches for 4-5 minutes until golden and tender. Season with salt, pepper and curry powder.
  • Butter 4 individual ramekin dishes. Arrange the zucchini over bases of prepared dishes. Top each with a circle of cheese.
  • In a bowl, combine crème fraiche, whole egg and egg yolk. Season with salt and pepper. Pour over cheese and zucchini in dishes. Bake for about 12-15 minutes or until golden and cooked through. Scatter with chives and serve with a green salad. If you can get some watercress, it suits this dish well. A tasty light flan which is very easy to make and takes such a short time to create.
