Yabby Apéritif

Yabbies are a much cherished delicacy in France, particularly in the Alps region where there are many lakes and streams where yabbies are in abundance.
This way of preparing and presenting yabbies doesn’t take long to put together, yet looks very impressive. The combination of the herbs fried in oil are absolutely delicious.

- 12 yabbies, partly cooked and peeled
- 3 cloves of crushed garlic
- 1 tblsp chopped parsley
- 1 tblsp chopped coriander
- 1 tsp paprika
- 3 tblsp olive oil
- Salt and pepper to taste
- A pinch of herbs d Provence
Avocado paste
- 1 mashed avocado
- 1 tblsp lime juice
- 12 slices of cucumber
Method
Method
- In a shallow pan with the oil, add all of the ingredients in the first section.
- Gently heat and then add the yabbies. Heat through for a few minutes, being careful not to burn the garlic. Set aside.
- To make the avocado paste, mash the avocado in a cup, squeeze the lime juice into it and sprinkle a bit of salt and pepper into it.
- Place the slices of cucumber onto a serving tray, spoon the mashed avocado onto each slice, then place a yabby on top. Drizzle the juice from the pan over the yabbies and serve with a sprinkling of chopped coriander or parsley over the top.
