White Bean Paté

This white bean paté is a tasty vegetarian alternative to the traditional liver paté. Dry white kidney beans can be boiled, or another option is to get them from a can. For this recipe I boiled dry beans for about an hour.

  • 2 tblsp olive oil
  • ½ tsp paprika
  • ¼ tsp cayenne pepper
  • ½ tsp white pepper
  • 2 shallots, finely chopped
  • 400 gr white kidney beans
  • 1 tsp tomato paste
  • 2 tblsp butter
  • Salt to taste
  • 3 tblsp dry sherry (I mixed apple cider vinegar, lemon juice, water and sugar together instead of sherry)
  • 3 tblsp soy sauce
  • 1 tblsp vegetable paste
