Upside down Pear and Almond Cake
Pears rank third in French fruit production, so there is no shortage of recipes which include pears.
This French upside down pear cake is an elegant dessert, or can be used as an afternoon tea cake.
- 4 ripe pears, peeled, cored, and sliced into 2 cm thick slices
- 270 gr softened butter
- 180 gr brown sugar
- 3 eggs
- 300 gr caster sugar
- 250 gr plain flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 80 gr almond meal
- 250 gr buttermilk (or you could put a tblsp of white vinegar, or lemon juice into milk and let it sit for 5 minutes)
