Provencal Nouveau Potatoes

The potato is comfort food in France, and there are so many variations of potato dishes which are all absolutely delicious, it’s difficult to choose where to begin.Here we have a very tasty, roasted, new season potato recipe which is one that you will cook many times over.

  • 1.5 kg small potatoes (if you can’t get small potatoes, just cut larger ones into small 4 cm pieces)
  • 10 -15 cherry tomatoes
  • 20 pitted olives (black and green)
  • 1 large onion, sliced from top to root
  • ½ cup olive oil
  • 2 tsp red wine vinegar
  • 2tsp salt flakesGround black pepper
  • ½ tsp chilli flakes1 tblsp herbs de Provence
  • ½ tsp garlic powder
  • 6 garlic cloves roasted whole, then soft centre squeezed out
