French Style Baked Salmon

Salmon remains the most popular fish for French consumers, with smoked salmon swimming ahead of fresh and frozen product. It is the number one fish eaten by the French.

- 1 tblsp Dijon mustard
- 2 tsp thyme leaves
- 2 tsp chopped rosemary
- 3 tblsp olive oil
- 3 tblsp sundried tomatoes (I used oven roasted tomatoes from my garden, they are packed with flavour)
- 1 tsp chilli flakes
- 4 Salmon fillets (I prefer to take skin off)

- Preheat oven to 230 degrees.
- In a dish, combine mustard, chilli flakes, tomatoes, rosemary, thyme, oil, salt and pepper.
- Spread this mixture evenly over the salmon. Place salmon into a baking dish and bake (uncovered) for 20 minutes.
- Remove from oven and serve with any vegetables or green salad of your choice.
