French Lentils with Goat Cheese and Walnuts

If you have ever looked at French lentils and wondered what to do with them, here is a recipe for a side dish which is flavoursome and light.

  • 300 gr dry French lentils
  • 2 bay leaves
  • 1 large leek, diced
  • 2 cloves crushed garlic
  • 3 sprigs fresh thyme
  • 3 tblsp balsamic vinegar
  • 3 tblsp light olive oil
  • Pinch of herbs de Provence (if you have them)
  • Salt and pepper to taste
  • 60 gr toasted walnuts
  • 150 gr goat cheese (Fetta is good to use if you don’t have goat cheese)
  • Walnut oil (optional)
