French Apple, Almond and Custard Tart

Here we have a classic dessert which can be found in any patisserie in France. Although there are a few steps to go through, this is not a complicated dessert to make.



  • 1 and ½ sheets puff pastry
  • 2 finely sliced green apples (I use a mandolin slicer)
  • 50 gr flaked almonds
  • 100 gr almond meal
  • 130 gr Demerara sugar (this is best for its crunchiness on dessert toppings)
  • Pastry cream (thick custard)
  • 3 tblsp apricot jam (heated)
  • Icing sugar for serving

Pastry Cream

  • 300 gr milk
  • 100 gr sugar
  • 1 egg yolk
  • 2 eggs
  • 30 gr plain flour
  • 10 gr corn flour
  • 1 tsp vanilla
  • 20 gr butter

Make the pastry cream the day before so that it is firm to handle when using it.
